Recently I traveled to Argentina and found that all salads are served with simple oil and vinegar. You will never find ranch, blue cheese or thousand island. It is a much healthier way to dress a salad and lately I have been using oil and vinegar on just about every vegetable I can think of.

This salad has kidney beans, cashews, tomatoes and cucumbers. I like to sprinkle a little bit of garlic salt and then pour extra virgin olive oil and balsamic vinegar all over the veggies. Hungry?? Head on over to Foodie Fridays!!

    Deanna, that looks delicious! I like that combo on a salad as well. If you have organic veggies, it’s even better because they are more flavorful. That’s a beautiful photograph by the way. Makes me hungry!

    My DH has been using oil and balsamic vinegar on his salads and fresh vegetables for years. I used to be a ranch girl, but lately I have been a convert. I like that you are including nuts for protein.

    For the dressing, I also just only use oil and vinegar. I prefer to keep things simple to fully enjoy the other ingredients!

    Another healthy way to use oil is to cook up broccoli til it is just barely tender, toss it with a little olive oil and grate a bit of goat cheese (a little goes a looong way). For extra special presentation, add toasted pine nuts for color and added flavor to the dish. Oh so yummy. It is a family favorite.
